Santa Fe Cheese Soup




This soup was a HIT at our family reunion/Christmas party this year and so it is much deserving to be shared! It's so easy and sooo yummy especially on a cold and chilly day!!

What you need:

1 1/2 lbs Ground Beef
1 Small onion

*Brown together and drain grease.

In a large pot, put meat, onion, then add the following: 

1 Can sweet corn - with juice
1 Large can diced tomato (I believe it is a 16 oz can)
1 Can Ranch Style Beans
1 Can Rotel (mild)
1 Can Golden Mushroom Soup
1 Block velveeta cheese (use the big block of velveeta- cut into cubes)

Mix everything together and simmer over low to medium heat for an hour. 

We ate ours with cornbread but chips, or any dipping bread would taste great too!
